Local Expert Series: Cooking with Chef Mike
Have you ever wanted to make your own pasta from scratch? If so, here's your chance! Join Michael Weinberger from Chef Michael's Personal Chef Services for a fun virtual cooking event. Participants will be given the option to pick up an ingredient kit before the event, to use while cooking from home with Chef Mike. Please register before Tuesday, April 13 to guarantee an ingredient kit. Any questions, please contact Melissa at melissa@dovernh.org.
Ingredient List:
Pasta-- 4 large eggs (room temperature)
- 2 1/2 cups flour (“00” flour, semolina flour, all-purpose flour — or a blend)
- 1 tablespoon olive oil
- 1 teaspoon fine sea salt
Sauce-- 2 Large cans (28oz) of whole plum tomatoes (San Marzano are excellent)
- ¼ cup olive oil
- 1 large onion diced
- 6-8 cloves garlic peeled and chopped
- 1 large handful of fresh basil (approx. 2 cups) roughly torn up
- Salt and pepper to taste (start with a tsp of each)
Equipment Needed:- Large cutting board (our countertop)
- Dough bench scraper (example here) or Knife
- Immersion (aka stick) blender or regular blender
